  • 1 cup raw cashews or pepitas/sunflower seeds for a nut-free option
  • 1 cup unsweetened almond milk or any unsweetened non-dairy milk
  • 1/4 cup nutritional yeast
For the Flavor
  • 1 can drained green chilies canned recommended
  • 2 tablespoons pickled jalapenos for tangy heat
  • 1 medium lemon juice only, fresh preferred
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder

Preparation Steps
  1. Soak cashews for 6-8 hours or boil for 20-30 minutes until softened. Drain and rinse.
  2. In a blender, combine soaked cashews, green chilies, jalapenos, lemon juice, nutritional yeast, smoked paprika, chili powder, and almond milk. Blend until smooth.
  3. Taste and adjust seasoning as desired with salt and almond milk for consistency.
  4. Transfer to an airtight container or serve immediately. Store in the fridge for up to 7 days or freeze for 1 month.
