Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash and halve 1 pint of cherry tomatoes, toss with olive oil and salt. Season chicken breast.
  2. Spread cherry tomatoes on a baking sheet and roast for about 15–20 minutes until blistered and caramelized.
  3. In a skillet, heat 1 tablespoon of olive oil, add chicken pieces and sauté for 6–8 minutes until golden brown.
  4. Lower heat, add 2 minced garlic cloves to the skillet, and stir until fragrant. Mix in the creamy pesto and cook for 2 minutes.
  5. Cook pasta according to package instructions. Drain and reserve 1 cup of pasta water.
  6. Add drained pasta to the skillet with chicken and pesto mixture. Add reserved pasta water as needed for creaminess.
  7. Fold in the roasted tomatoes and warm through.
  8. Serve in bowls with grated Parmesan and fresh herbs for garnish.
