Instructions
  1. In a large pot, heat over medium heat, then add the ground beef. Cook for about 5-7 minutes, breaking it apart until evenly browned. Drain excess fat if necessary, and keep heat on low.
  2. Reduce heat to medium-low and add the cubed Velveeta cheese along with the undrained Rotel tomatoes. Stir well to combine.
  3. Continue stirring on medium-low heat for about 5-8 minutes until the cheese melts and the mixture is smooth.
  4. Transfer the melted dip into a serving bowl while it's still warm. Pair with crunchy tortilla chips or fresh veggies.
