Ingredients
  

  • 8 ounces fettuccine or linguine pasta
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup fresh spinach chopped
  • 8 ounces cooked salmon flaked
  • 1 cup heavy cream
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
  4. Add the flaked salmon to the skillet and gently mix it with the spinach.
  5. Pour in the heavy cream and lemon juice, stirring to combine. Let the mixture simmer for 2-3 minutes until slightly thickened.
  6. Season with salt and pepper to taste. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  7. Add the cooked pasta to the skillet and toss to coat in the creamy sauce.
  8. Stir in the grated Parmesan cheese until melted and well combined.
  9. Serve immediately, garnished with fresh parsley.
