Ingredients
  

  • 2 large chicken breasts about 1 pound total
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil chopped
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Sear the chicken for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
  4. Lower the heat and pour in the heavy cream, stirring to combine. Add the Parmesan cheese, chopped basil, and Italian seasoning. Mix well until the cheese is melted and the sauce is creamy.
  5. Return the chicken breasts to the skillet, spooning some of the sauce over the top. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
  6. Remove from the oven and let it rest for a few minutes before serving. Garnish with additional basil if desired.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or coconut milk.
