Step‑by‑Step Instructions
  1. In a food processor, combine a ripe avocado, sour cream, fresh lime juice, cilantro leaves, and kosher salt. Blend until smooth and creamy, then refrigerate.
  2. In a large skillet, heat avocado oil over medium heat. Add chopped onions and sauté for about 5 minutes. Introduce the ground turkey with half the taco seasoning, cooking until browned, about 5-7 minutes.
  3. Stir in drained black beans and green chiles to the turkey mixture. Add remaining taco seasoning and chopped cilantro. Simmer on low for about 15 minutes.
  4. Preheat oven to 425°F (220°C). Lay tortillas on a baking sheet, top with shredded cheese, spoon turkey mixture onto each, fold, and place seam-side down.
  5. Bake for 10-12 minutes until golden brown and crispy. The tortillas will lift at the corners as they cook.
