- Prepare the ‘Honey’ Mustard Sauce by whisking together neutral oil, agave or maple syrup, yellow or Dijon mustard, and a pinch of salt and pepper until combined.
- Prepare Tofu by draining the extra firm tofu and pressing it to eliminate excess moisture for about 10 minutes. Cut into 1-inch strips.
- Make the Batter by combining all-purpose flour, cornstarch, baking powder, salt, and optional paprika. Gradually stir in water.
- Coat Tofu by dipping each strip into the batter and then into panko breadcrumbs, ensuring a good coating.
- Bake at 350°F (175°C) for 30-35 minutes, flipping halfway, until crispy and golden.
- Final Coat: Brush sauce over each tender and bake for an additional 5-8 minutes.
