Ingredients

For the Filling
  • 1 lb Ground beef (80/20) Swap with ground turkey for a leaner option or seasoned black beans for a vegetarian delight.
  • 1 cup Shredded cheese (cheddar or Mexican blend) Try pepper jack for extra heat.
  • 1 tsp Cumin Can substitute with ground coriander.
  • 1 tsp Chili powder Adjust based on spice preference.
  • 0.5 tsp Garlic powder Fresh minced garlic can be used.
For the Wrap
  • 6-8 pieces Tortillas (flour or corn, 6–8-inch) Warm to prevent tearing; gluten-free options available.
  • 1 cup Neutral oil For frying; vegetable oil works well.
For Serving
  • 1 cup Sour cream Use Greek yogurt for a lighter choice.
  • 1 cup Salsa Choose chunky or smooth based on preference.

Equipment

  • Skillet
  • baking sheet
  • microwave

Method

Instructions
  1. Preheat the oven to 400°F (200°C) or heat about half an inch of oil in a skillet over medium-high heat.
  2. In a large skillet, cook ground beef over medium-high heat for 5-7 minutes until browned. Stir in cumin, chili powder, and garlic powder, cooking for another 2 minutes.
  3. Remove from heat and stir in shredded cheese until it melts.
  4. Warm tortillas in a damp towel in the microwave for 30 seconds or in a skillet for 15 seconds per side.
  5. Assemble taquitos by placing a spoonful of beef-cheese mixture on a tortilla, rolling tightly with the seam side down.
  6. If baking, place taquitos on a baking sheet and bake for 15-20 minutes, flipping halfway through. If frying, cook for 2-3 minutes per side in hot oil.
  7. Remove from oven or skillet, let cool for a minute, and serve immediately with sour cream and salsa.
