Step-by-Step Instructions for Focaccia Pizza
  1. In a mixing bowl, combine lukewarm water, instant yeast, olive oil, honey, and fine table salt. Gradually mix in bread flour until a sticky dough forms. Let the dough rest for 15 minutes.
  2. Perform stretches and folds every 15 minutes for about an hour to develop gluten.
  3. Transfer the dough to a greased skillet, cover, and let rise for 1.5 hours.
  4. Preheat oven to 430°F and place a pizza stone inside.
  5. Drizzle olive oil on the dough, spread pizza sauce, sprinkle basil, add cheese, and arrange pepperoni on top.
  6. Bake for 25-30 minutes until bubbly and golden brown.
  7. Cool for 5 minutes, garnish with Parmesan, cut into wedges, and serve warm.
