Steps to Prepare
  1. In a mixing bowl, whisk together the flour, baking powder, sugar, and salt. In a separate bowl, combine the milk and eggs. Slowly pour the wet mixture into the dry ingredients, stirring gently until just combined.
  2. Preheat your griddle or non-stick skillet over medium heat for about 5 minutes, then lightly grease with oil or butter.
  3. Pour small amounts of batter (about 2 tablespoons) onto the heated griddle and cook for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes until golden brown.
  4. Remove the pancakes from the griddle, stack them up, and thread 3-4 mini pancakes onto each skewer, alternating with berries or fruit.
  5. Arrange the kebabs on a platter and serve warm with maple syrup, honey, or yogurt dip.
