  • 1/2 cup Parmesan Cheese Can be replaced with Pecorino.
For Garnish
  • 2 tablespoons Fresh Thyme Replace with dried thyme or omit.

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C). Gather your ingredients and equipment.
  2. In a small saucepan, combine heavy cream, kosher salt, and minced garlic. Simmer gently for 5 minutes.
  3. Thinly slice the Yukon Gold potatoes to about 1/8 inch thick using a mandoline.
  4. In a cast iron skillet, melt butter over low heat, add diced shallots, and sauté for 5 minutes until caramelized.
  5. Layer thin potato slices over the caramelized shallots, then pour the garlic-infused cream mixture evenly over them.
  6. Cover the skillet with foil and bake for 1 hour and 15 minutes or until potatoes are tender.
  7. Uncover and sprinkle grated Gruyere and Parmesan on top. Broil for 5 minutes until golden and bubbly.
  8. Let the gratin cool for a few minutes before serving.
