- In a small saucepan, combine heavy cream, kosher salt, and minced garlic. Simmer gently for 5 minutes.
- Thinly slice the Yukon Gold potatoes to about 1/8 inch thick using a mandoline.
- In a cast iron skillet, melt butter over low heat, add diced shallots, and sauté for 5 minutes until caramelized.
