Method
 

Preparation Steps
  1. Boil the potatoes in cold water until fork-tender, about 15-20 minutes. Drain and cool slightly.

  3. Smash the cooled potatoes on a greased baking sheet until about ½ inch thick.
  4. Drizzle olive oil over each potato and season with garlic, salt, and pepper.
  5. Sprinkle grated Parmesan cheese on top of each potato.
  6. Bake in the oven for 25-30 minutes until golden brown and crispy.
  7. Garnish with freshly chopped parsley before serving.
