Ingredients
  

For the Fish
  • 4 fillets Catfish Pat dry for best results.
  • 1 cup Buttermilk Substitute with milk plus lemon juice if necessary.
For the Breading
  • 1 cup Cornmeal Yellow cornmeal works best.
  • 1/2 teaspoon Cayenne Pepper Adjust to taste.
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For Frying
  • 2 cups Canola Oil Or vegetable/peanut oil.

Method
 

Step-by-Step Instructions
  1. Pat dry the catfish fillets. Soak fillets in buttermilk for at least 10 minutes.
  2. Mix cornmeal, cayenne pepper, salt, and black pepper in a wide bowl.
  3. Heat canola oil in a skillet over medium heat to 312°F to 350°F.
  4. Remove fillets from buttermilk and dredge in the cornmeal mixture.
  5. Place coated fillets into hot oil, fry for 2.5 to 3 minutes until golden brown.
  6. Flip fillets and cook the other side for another 3 minutes.
  7. Check that the internal temperature reaches at least 145°F.
  8. Remove from oil, drain on paper towels, and serve hot.
