- Pat dry the catfish fillets. Soak fillets in buttermilk for at least 10 minutes.
- Mix cornmeal, cayenne pepper, salt, and black pepper in a wide bowl.
- Heat canola oil in a skillet over medium heat to 312°F to 350°F.
- Remove fillets from buttermilk and dredge in the cornmeal mixture.
- Place coated fillets into hot oil, fry for 2.5 to 3 minutes until golden brown.
- Flip fillets and cook the other side for another 3 minutes.
- Check that the internal temperature reaches at least 145°F.
- Remove from oil, drain on paper towels, and serve hot.
