  1. Pat the fish fillets dry and season with salt and pepper.
  2. Soak the fillets in buttermilk for 30 minutes.
  3. Combine cornmeal, flour, paprika, cayenne, garlic powder, onion powder, salt, and pepper in a dish.
  4. Heat vegetable oil in a cast-iron skillet to 350°F.
  5. Dredge the fish fillets in the cornmeal mixture.
  6. Fry the fish in hot oil for 3-4 minutes on each side or until golden brown.
  7. Remove and drain the fish on a wire rack or paper towels.
  8. Serve hot with lemon wedges.
