  • 1 whole Lemon Cut into wedges for serving.

Equipment

  • Large fry pan
  • medium bowl
  • Small bowl

Method

Cooking Steps
  1. Heat the oil in a large fry pan over medium heat, pouring in the olive oil and allowing it to heat for about 5 minutes until slightly shimmering.
  2. Drain the sardines in a bowl to remove excess oil and set aside.
  3. In a medium bowl, whisk together the eggs, parsley, salt, and pepper for about 2 minutes until well combined.
  4. Prepare a separate bowl with the all-purpose flour for coating the sardines.
  5. Coat each sardine by rolling it in flour, then dipping it into the egg wash, allowing excess to drip off.
  6. Fry the sardines in the hot oil for about 2 minutes on each side or until golden brown.
  7. Transfer the fried sardines to a dish lined with paper towels to absorb excess oil.
  8. Mix the low-fat mayonnaise, garlic, and lemon juice in a small bowl until smooth and creamy.
  9. Serve the fried sardines on a platter with lemon wedges and the garlic aioli for dipping.

For best results, ensure the oil is hot enough before frying and avoid overcrowding the pan. Let sardines rest briefly after coating for better adherence.
