  • 2 pounds Yukon Gold or Russet Potatoes For best texture
  • 1 teaspoon Salt For seasoning
For the Za’atar Seasoning
  • 2 tablespoons Za’atar Aromatic blend
  • 3 tablespoons Extra Virgin Olive Oil For roasting
For the Tahini Yogurt Sauce
  • 1 cup Tahini For creaminess
  • 1 cup Yogurt Use dairy-free for vegan
  • 1/4 cup Water To adjust consistency

Method
 

Cooking Instructions
  1. Fill a large pot with salted water and bring it to a boil. Add whole potatoes and cook for 15-20 minutes until tender. Drain and cool.
  2. Gently press each cooled potato until flattened, aiming for half an inch thickness.
  3. Drizzle each smashed potato with olive oil and sprinkle za’atar seasoning evenly on top.
  4. Heat a skillet over medium-high heat. Cook the seasoned potatoes for 4-5 minutes on each side until crispy and golden.
  5. In a bowl, mix tahini and yogurt. Add salt and water gradually until reach desired consistency.
  6. Drizzle tahini yogurt over crispy potatoes and serve warm, optionally garnished with fresh herbs.
