- Fill a large pot with salted water and bring it to a boil. Add whole potatoes and cook for 15-20 minutes until tender. Drain and cool.
- Gently press each cooled potato until flattened, aiming for half an inch thickness.
- Drizzle each smashed potato with olive oil and sprinkle za’atar seasoning evenly on top.
- Heat a skillet over medium-high heat. Cook the seasoned potatoes for 4-5 minutes on each side until crispy and golden.
- In a bowl, mix tahini and yogurt. Add salt and water gradually until reach desired consistency.
- Drizzle tahini yogurt over crispy potatoes and serve warm, optionally garnished with fresh herbs.
