- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Mix hot water with instant coffee granules until dissolved; set aside to cool.
- Cream together 1 cup of unsalted butter, ½ cup of brown sugar, and ½ cup of granulated sugar until light and fluffy.
- Add in one large egg and the cooled coffee mixture, mixing until combined.
- Whisk together 2 cups of all-purpose flour, ¾ cup of cocoa powder, 1 teaspoon of baking soda, and ½ teaspoon of salt; gradually mix into wet ingredients.
- Roll ¼ cup of dough into balls, coat in crushed Oreos, and place on the baking sheet.
- Bake for 12-13 minutes, then cool on baking sheets for about 10 minutes.
- Transfer cookies to a wire rack to cool completely.
- Melt 1 cup of chocolate chips and combine with ½ cup of softened butter, 2 cups of powdered sugar, ¼ cup of cocoa powder, and 1 teaspoon of vanilla extract until smooth.
