  • 1 cup cream cheese softened
  • 1 tablespoon fresh dill chopped (or 1 teaspoon dried dill)
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup crumbled feta cheese optional

Method
 

  1. Slice the cucumber into 1/2-inch thick rounds and arrange them on a serving platter.
  2. In a medium bowl, combine the cream cheese, dill, garlic powder, lemon juice, salt, and pepper. Mix until smooth and well combined.
  3. Using a small spoon or piping bag, dollop or pipe the cream cheese mixture onto each cucumber slice.
  4. Top each cucumber bite with a half cherry tomato, a sprinkle of red onion, and feta cheese if using.
  5. Serve immediately or refrigerate for up to 30 minutes before serving for a chilled option.
