Step-by-Step Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well combined. Set aside.
- In a large mixing bowl, beat the softened unsalted butter, granulated sugar, brown sugar, and vanilla extract until creamy, about 2-3 minutes. Add in the egg and mix until fully incorporated.
- Gradually incorporate the dry ingredients into the wet mixture, mixing until just blended. Gently fold in the chocolate chips.
- Drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for approximately 10 minutes until edges are golden brown.
- In a separate bowl, beat the cream cheese with powdered sugar and a dash of vanilla extract until smooth and creamy, about 2-3 minutes.
- Once the cookies have cooled completely, spread the creamy filling between two cookies to assemble the sandwiches.
- If desired, chill the sandwiches for about 30 minutes to firm up the filling.
