Prepare the Crust
- Crush graham crackers into fine crumbs. Mix with melted butter and sugar until moistened. Press into bottom of springform pan. Bake at 350°F for 10 minutes, then cool.
Make Strawberry Sauce
- In a saucepan, stir strawberries with a sprinkle of sugar. Cook for 5-7 minutes until juices are released. Mash slightly and cool.
Mix Cheesecake Filling
- Beat cream cheese and sugar until smooth. Add sour cream, eggs, and vanilla, blending well without overmixing.
Combine and Swirl
- Pour half of cheesecake filling into crust. Add dollops of strawberry sauce, swirling lightly. Pour remaining filling over and add more swirls.
Bake the Cheesecake
- Bake at 325°F in a water bath for 55-60 minutes until set around edges, slightly jiggly in center.
Cool Gradually
- Turn off oven, crack door, cool cheesecake for 1 hour. Chill in fridge for at least 4 hours or overnight.
