Preparation Steps

  2. Cook the Rice: Prepare the white rice as per package directions, then mix in lime juice, chopped cilantro, and a pinch of salt.
  3. Warm the Black Beans: Heat black beans in a saucepan with a pinch of cumin and salt for about 5 minutes.
  4. Char the Corn: Heat a skillet and cook corn for 5-7 minutes until blistered.
  5. Prepare the Toppings: Slice red onion, cherry tomatoes, and avocado. Mix sour cream (or yogurt), lime juice, cilantro, garlic, and a pinch of salt for dressing.
  6. Cook the Steak: Sear marinated steak in a hot skillet for 3-4 minutes per side until medium-rare. Rest for 10 minutes before slicing.
