- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the Irish-style wholemeal flour, all-purpose flour, baking powder, sugar, and salt.
- Cut cold butter into the flour mixture until it resembles coarse crumbs.
- Gently fold in the butterscotch chips until evenly distributed.
- In a separate bowl, whisk together the egg, Irish cream liqueur, and milk.
- Pour the wet ingredients into the flour mixture and gently stir until just combined.
- Drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake the scones for 15 to 18 minutes or until golden brown on top.
- Melt butterscotch chips with Irish cream in the microwave for about 30 seconds.
- Once cooled, drizzle the butterscotch glaze over the scones.
