Glaze Ingredients
  • 0.5 cup Butterscotch chips Melt with Irish cream for added flavor.
  • 2 tbsp Irish cream liqueur Skipping this is an option if needed.

Method
 

Preparation Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the Irish-style wholemeal flour, all-purpose flour, baking powder, sugar, and salt.
  3. Cut cold butter into the flour mixture until it resembles coarse crumbs.
  4. Gently fold in the butterscotch chips until evenly distributed.
  5. In a separate bowl, whisk together the egg, Irish cream liqueur, and milk.
  6. Pour the wet ingredients into the flour mixture and gently stir until just combined.
  7. Drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake the scones for 15 to 18 minutes or until golden brown on top.
  9. Melt butterscotch chips with Irish cream in the microwave for about 30 seconds.
  10. Once cooled, drizzle the butterscotch glaze over the scones.
