For the Chutney
  • 4 medium Tomatoes The heart of the chutney.

  • 1 inch Ginger Adds warmth and aroma.
  • 2 pieces Green Chilies Adjust for spice level.
  • 1/2 teaspoon Turmeric Powder For color and flavor.
  • 1/2 teaspoon Red Chili Powder Control heat as desired.
  • 1 teaspoon Salt To taste.
  • 2 tablespoons Ghee For richness; substitute with vegetable oil if desired.
  • 1 teaspoon Chaat Masala For tangy flavor.
For the Toppings
  • 1 medium Onion Red onion is preferable for sweetness.
  • 1 medium Cucumber Add diced bell pepper for variation.
  • 1/4 cup Cilantro Chopped.
  • 1/2 cup Pomegranate Seeds For sweetness and visual appeal.
  • 1/2 cup Sev (Bhujiya) For extra crunch.
  • 1 pieces Lemon Wedges For garnish.

Method
 

Chutney Preparation
  1. Blend tomatoes, garlic, ginger, and green chilies with a splash of water until smooth.
  2. Heat ghee in a medium pan, pour in the tomato mixture and cook for 6-8 minutes.
  3. Add turmeric, red chili powder, and salt; cooking until ghee separates.
Toppings Mixing
  1. Mix diced onion, cucumber, green chilies, and cilantro in a bowl.
Platter Assembly
  1. Layer crispy papad on a serving dish, spread the chutney, and top with mixed veggies.
  2. Sprinkle pomegranate seeds, sev, and chaat masala, lastly arrange lemon wedges around.
