Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) with the oven rack in center position.
  2. In a mixing bowl, combine unsalted butter, maple syrup, pomegranate juice, orange juice, orange zest, fresh thyme, rosemary, and sage. Mix thoroughly.
  3. Pat your whole chicken dry using paper towels and separate the skin from the meat.
  4. Apply the herb butter mixture under the chicken's skin, reserving some for basting.
  5. Stuff the chicken cavity with orange quarters, garlic, and herb sprigs, then tie the legs with twine.
  6. Place the chicken in a roasting pan breast-side up and bake uncovered for 30 minutes.
  7. Lower the oven temperature to 350°F (175°C), baste the chicken, and continue roasting for 1.5 to 2 hours.
  8. Let the chicken rest for 30 minutes before carving and serving.
