Step-by-Step Instructions
  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté for about 5-7 minutes until soft and translucent.
  2. Stir in minced garlic and turmeric. Cook for an additional 1-2 minutes.
  3. Pour in vegetable broth, followed by lentils, chickpeas, navy beans, and kidney beans. Bring to a boil.
  4. Reduce the heat to low and cover the pot, letting it simmer for about 20 minutes.
  5. Add noodles to the pot and cook for approximately 10 minutes.
  6. Stir in chopped greens and cook for another 5-7 minutes.
  7. Season with salt and pepper to taste, then serve topped with sour cream or yogurt and fried onions.
