  • 1 cup Red Cabbage Green cabbage can be used for a milder flavor

  • 1/2 cup Gorgonzola Cheese Feta cheese makes a great alternative

  • 1/4 cup White Balsamic Vinegar Use red wine vinegar or apple cider vinegar instead
  • 2 cloves Garlic Adjust quantity to taste
  • 1 tbsp Dijon Mustard Yellow mustard is a fine substitute
  • 1 tbsp Sugar Can reduce or swap with honey
  • 1 tsp Dried Oregano Fresh oregano can be used if available
  • to taste Salt & Pepper Adjust to taste

Method
 

Step-by-Step Instructions
  1. Cook the Pasta: Boil a pot of salted water, add ditalini pasta, and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Prepare the Bacon: Cook bacon in a skillet until crispy. Transfer to a paper towel-lined plate to cool and crumble.
  3. Chop the Fresh Ingredients: Wash and chop lettuce, shred red cabbage, and slice grape tomatoes and green onions. Combine in a salad bowl.
  4. Combine the Salad Ingredients: Add cooled pasta and crumbled bacon to the vegetables. If desired, add cooked chicken and Gorgonzola cheese. Toss gently.
  5. Whisk the Dressing: In a bowl, whisk olive oil, vinegar, garlic, mustard, sugar, and oregano. Season with salt and pepper.
  6. Dress the Salad: Drizzle dressing over the salad and toss to coat evenly just before serving.
