Don’t forget to soak the rice vermicelli according to package instructions, usually around 5–7 minutes until tender, then drain and set aside.
  2. Fill a shallow dish with warm water to soften the rice paper wrappers. One at a time, dip each sheet in the water for about 5-7 seconds until it becomes pliable but not too soft. You’ll know it’s ready when it’s slightly tacky yet retains some firmness.
  3. To create your shrimp spring rolls, place the softened rice paper on your work surface. Starting at the lower third of the wrapper, layer a few shrimp, a small handful of rice vermicelli, and your selected veggies.
