Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish generously with olive oil or cooking spray.
  3. In a large bowl, combine cottage cheese, chopped broccoli florets, diced bell pepper, sliced zucchini, halved cherry tomatoes, fresh spinach, and diced red onion.
  4. In a separate bowl, whisk together the eggs, olive oil, garlic powder, onion powder, black pepper, salt, and dried oregano until fully blended.
  5. Pour the egg mixture over the vegetable medley and gently stir the contents until everything is evenly coated.
  6. Spread the vegetable and egg mixture evenly in the greased baking dish.
  7. Sprinkle shredded mozzarella cheese liberally over the top of the veggie mixture.
  8. Place the baking dish in your preheated oven and bake for 30-35 minutes.
  9. Once baked, remove the dish from the oven and let it cool slightly for about 10 minutes.
