Preparation
- Preheat the oven to 400°F (200°C).
- Slice zucchini into thin strips (approx. 1/8 inch thick) and sprinkle with salt. Let sit for 20 minutes to draw out moisture.
- Place zucchini strips on a baking sheet and roast for 10 minutes.
- Cook Italian sausage in a skillet over medium heat until no longer pink (about 5-7 minutes).
- In a mixing bowl, combine sausage with ricotta, parmesan, garlic powder, basil, parsley, egg, salt, and pepper.
- Spread half of the marinara sauce in a baking dish. Fill zucchini strips with cheese mixture and roll them up. Place seam-side down in the dish.
- Pour remaining marinara sauce over the top and sprinkle with mozzarella.
- Bake for 20-25 minutes until cheese is bubbly and golden.
