For the Rollatini
  • 4 medium Zucchini
  • 1 lb Italian Sausage or ground turkey for a lighter option
  • 1 large Egg to bind the filling
For the Cheese Filling
  • 1 cup Ricotta Cheese cottage cheese can be a low-fat alternative
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Parmesan Cheese grated
  • 1 tsp Garlic Powder
  • 1/4 cup Fresh Basil chopped
  • 1/4 cup Fresh Parsley chopped
For the Sauce
  • 2 cups Keto Marinara Sauce add no sugar options
  • to taste Salt
  • to taste Black Pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice zucchini into thin strips (approx. 1/8 inch thick) and sprinkle with salt. Let sit for 20 minutes to draw out moisture.
  3. Place zucchini strips on a baking sheet and roast for 10 minutes.
  4. Cook Italian sausage in a skillet over medium heat until no longer pink (about 5-7 minutes).
  5. In a mixing bowl, combine sausage with ricotta, parmesan, garlic powder, basil, parsley, egg, salt, and pepper.
  6. Spread half of the marinara sauce in a baking dish. Fill zucchini strips with cheese mixture and roll them up. Place seam-side down in the dish.
  7. Pour remaining marinara sauce over the top and sprinkle with mozzarella.
  8. Bake for 20-25 minutes until cheese is bubbly and golden.
