Step-by-Step Instructions for Taco Bake
  1. Preheat the oven to 350°F (175°C).
  2. Cook the lean ground beef in a skillet over medium-high heat for 5-7 minutes until browned. Drain excess grease.
  3. Add the taco seasoning mix and diced tomatoes to the beef. Stir and simmer for 5 minutes.
  4. Line the bottom of a 9x13 inch baking dish with half of the corn tortillas, overlapping slightly.
  5. Spoon the beef mixture over the tortillas, spreading it evenly.
  6. Layer the remaining tortillas on top of the beef mixture and spread salsa over them.
  7. Sprinkle shredded Colby cheese over the top layer.
  8. Bake in the preheated oven for 20-30 minutes until the cheese is bubbly and golden.
  9. Remove from the oven and let it rest for 5 minutes before serving.
