- Generously spray the inside of your slow cooker with cooking spray.
- In a large mixing bowl, combine steel-cut oats, water, almond milk, canned pumpkin, maple syrup, vanilla extract, pumpkin pie spice, cinnamon, and salt. Stir until well mixed.
- Pour the combined ingredients into the slow cooker and spread evenly.
- Set your slow cooker to low and let it cook for about 6 to 8 hours, ideally around 7 hours.
- Once cooked, stir and spoon into bowls, topping as desired.
