Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond meal, all-purpose flour, sugar, kosher salt, baking powder, and baking soda.
  3. Gradually drizzle neutral oil into the bowl containing the dry ingredients, mixing gently until a cohesive dough starts to form.
  4. If your dough feels too crumbly, add a little more oil, one teaspoon at a time.
  5. Scoop out approximately 1-inch portions and roll them into balls with your hands. Arrange these dough balls on the prepared baking sheet, leaving space between each one.
  6. Press a roasted almond gently onto the top of each dough ball, if desired.
  7. Bake the cookies for 12-15 minutes until golden brown.
  8. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
