Ingredients
  

For the Syrup
  • 2 1/4 cups blueberries fresh is best
  • 1 cup granulated sweetener substitute with non-caloric sweetener for sugar-free
  • 1 cup filtered water to create the syrup
  • 1 tsp lemon juice enhances flavors
For the Drink
  • ice enough to chill your glass
  • 1 cup club soda for fizz
  • 1/4 cup sugar-free blueberry syrup
  • 3 tbsp half & half substitute with coconut or almond milk for dairy-free
  • 1/4 cup whipped cream can be swapped for dairy-free alternative

Method
 

Step-by-Step Instructions
  1. Combine 2 1/4 cups of blueberries, 1 cup of sweetener, 1 cup of water, and 1 tsp of lemon juice in a medium saucepan and cook on medium heat for about 10 minutes until thickened. Strain through a fine mesh sieve.
  2. Fill a tall glass three-quarters full with ice.
  3. Pour 1/4 cup of the blueberry syrup over the ice.
  4. Gently pour in 1 cup of club soda over the syrup and ice, stirring only once to maintain fizz.
  5. Drizzle 3 tablespoons of half & half over the drink to add creaminess.
  6. Top with a dollop of whipped cream, garnish with fresh blueberries or mint if desired.
