- Combine 2 1/4 cups of blueberries, 1 cup of sweetener, 1 cup of water, and 1 tsp of lemon juice in a medium saucepan and cook on medium heat for about 10 minutes until thickened. Strain through a fine mesh sieve.
- Fill a tall glass three-quarters full with ice.
- Pour 1/4 cup of the blueberry syrup over the ice.
- Gently pour in 1 cup of club soda over the syrup and ice, stirring only once to maintain fizz.
- Drizzle 3 tablespoons of half & half over the drink to add creaminess.
- Top with a dollop of whipped cream, garnish with fresh blueberries or mint if desired.
