Preparation
- Prepare the crust by crushing graham crackers and mixing with melted butter. Press into serving cups and refrigerate for 15 minutes.

- Mix ricotta cheese in a bowl, whisk until smooth, then gradually add honey until well incorporated.

- Assemble cups by adding the ricotta mixture over the crust in each cup and smooth the tops.

- Top each cup with chopped pistachios generously.

- Cover and chill the assembled cups in the refrigerator for at least 30 minutes.

- Serve chilled, optionally with fresh fruit for garnish.
