Ingredients
  

For the Mango Curd
  • 2 cups Mango Pulp Fresh ripe mangoes or canned Alphonso/Kesar mango pulp can be used.
  • 1 cup Granulated Sugar No substitutes recommended.
  • 3 tablespoons Cornstarch Essential for thickening.
For the Cream Layer
  • 8 ounces Vegan Cream Cheese Homemade substitutes are acceptable.
  • 1 cup Greek-Style Vegan Yogurt Thick coconut yogurt or silken tofu may be used.
  • 1/2 cup Powdered Sugar Avoid granulated sugar.
For the Soak and Base
  • 1/2 cup Wild Mango Balsamic Regular balsamic vinegar is acceptable.
  • 20 pieces Vegan Cookies Suggestions include ginger cookies, graham crackers, or Biscoff cookies.
For Assembly and Topping
  • 2 cups Fresh Mangoes Choose firm and ripe for best taste.
  • 1 cup Additional Mango Slices For garnishing.

Method
 

Making the Tiramisu
  1. In a medium saucepan, combine mango pulp, granulated sugar, and cornstarch. Whisk over medium heat until thickened.
  2. In a small bowl, mix wild mango balsamic, additional mango pulp, and hot water, allowing to sit to enhance flavors.
  3. Beat the vegan cream cheese until fluffy. Gradually add yogurt and powdered sugar, then fold in half of the mango curd.
  4. Assemble by dipping cookies in the soak, placing layers in a serving dish, alternating with cream mixture and diced mango.
  5. Cover and refrigerate for at least 2 hours, or overnight for best results.
  6. Spread remaining mango curd on top and garnish with fresh mango slices before serving.

Notes
