Making the Tiramisu
- In a medium saucepan, combine mango pulp, granulated sugar, and cornstarch. Whisk over medium heat until thickened.
- In a small bowl, mix wild mango balsamic, additional mango pulp, and hot water, allowing to sit to enhance flavors.
- Beat the vegan cream cheese until fluffy. Gradually add yogurt and powdered sugar, then fold in half of the mango curd.
- Assemble by dipping cookies in the soak, placing layers in a serving dish, alternating with cream mixture and diced mango.
- Cover and refrigerate for at least 2 hours, or overnight for best results.
- Spread remaining mango curd on top and garnish with fresh mango slices before serving.
