- Preheat your oven to 375°F (190°C) and prepare a greased 9x13-inch baking dish.
- In a large pot, bring salted water to a boil. Add cheese tortellini and cook until al dente, about 3-4 minutes. Drain and set aside.
- In a bowl, combine the drained tortellini, fresh spinach, ricotta cheese, half of the mozzarella, and minced garlic. Season with salt and pepper.
- Pour the mixture into the greased baking dish and evenly spread it out. Sprinkle the remaining mozzarella and grated Parmesan on top.
- Bake for 25-30 minutes until the cheese is bubbly and golden brown.
- Remove from the oven and let it rest for 5-10 minutes before serving.
