Ingredients
  

For the Crust
  • 1 cup Graham Crackers Pre-crushed crumbs for convenience
For the Cheesecake Filling
  • 8 oz Cream Cheese Softened to room temperature
  • 1 cup Heavy Cream
  • 1/2 cup Sugar Adjust based on sweetness of berries
  • 1 tsp Vanilla Extract Almond extract can be used for variation
For the Fruit Layers
  • 1 cup Strawberries Ripe and hulled
  • 1 cup Blueberries Fresh or frozen
For the Topping
  • 1 cup Whipped Cream Fresh or canned

Method
 

Cheesecake Filling Preparation
  1. In a mixing bowl, combine softened cream cheese, sugar, and vanilla extract. Beat on medium speed until smooth and fluffy, about 2-3 minutes.
  2. In a separate bowl, whip the heavy cream on medium-high speed until soft peaks form, about 3-4 minutes. Fold into the cream cheese mixture until fully combined.
Assembling the Parfaits
  1. Crush graham crackers into fine crumbs and layer about a tablespoon at the bottom of each glass.
  2. Slice strawberries and add a layer on top of the graham cracker base in each glass.
  3. Pipe or spoon in the cheesecake filling over the strawberries.
  4. Sprinkle blueberries on top of the cheesecake layer.
  5. Add a dollop of whipped cream on top.
  6. Refrigerate for at least 30 minutes before serving.
