Cheesecake Filling Preparation
- In a mixing bowl, combine softened cream cheese, sugar, and vanilla extract. Beat on medium speed until smooth and fluffy, about 2-3 minutes.
- In a separate bowl, whip the heavy cream on medium-high speed until soft peaks form, about 3-4 minutes. Fold into the cream cheese mixture until fully combined.
Assembling the Parfaits
- Crush graham crackers into fine crumbs and layer about a tablespoon at the bottom of each glass.
- Slice strawberries and add a layer on top of the graham cracker base in each glass.
- Pipe or spoon in the cheesecake filling over the strawberries.
- Sprinkle blueberries on top of the cheesecake layer.
- Add a dollop of whipped cream on top.
- Refrigerate for at least 30 minutes before serving.
