For the Pastry
  • 1 package Puff Pastry Pre-rolled pastry saves time.
  • 1 egg Egg Wash Can substitute with milk or cream for brushing.

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and sauté fresh spinach until wilted for 2-3 minutes. Let cool.
  2. Combine the cooled spinach, feta cheese, Dijon mustard, fresh herbs, and lemon juice in a bowl.
  3. Unroll the puff pastry onto a lightly floured surface and cut into 6x6 inch squares.
  4. Place a salmon filet in the center of each square and top with the spinach and feta mixture. Fold and seal the edges.
  5. Whisk an egg and brush it over each Wellington for a golden finish.
  6. Bake the Wellingtons on a parchment-lined sheet for about 25 minutes until golden brown.
  7. Let cool for 5 minutes before serving warm.
