Step-by-Step Instructions
  1. Drain and rinse two cans of black beans. Mash one can of beans until mostly smooth, leaving the other can whole for texture.
  2. In a skillet, heat a tablespoon of olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent. Add minced garlic and stir for 1 minute.
  3. Sprinkle in smoked paprika and ground cumin, stirring well. Add cooked quinoa and mix until coated in spices.
  4. Transfer the mixture into the bowl with mashed black beans. Fold in oats and bread crumbs until cohesive.
  5. Shape the mixture into patties about ½ inch thick. Refrigerate for 15 minutes.
  6. Heat another tablespoon of oil in the skillet. Place patties and cook for about 5 minutes per side until golden brown.
