- Drain and rinse two cans of black beans. Mash one can of beans until mostly smooth, leaving the other can whole for texture.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent. Add minced garlic and stir for 1 minute.
- Sprinkle in smoked paprika and ground cumin, stirring well. Add cooked quinoa and mix until coated in spices.
- Transfer the mixture into the bowl with mashed black beans. Fold in oats and bread crumbs until cohesive.
- Shape the mixture into patties about ½ inch thick. Refrigerate for 15 minutes.
- Heat another tablespoon of oil in the skillet. Place patties and cook for about 5 minutes per side until golden brown.
