Ingredients
  

For the Ice-Cream Filling
  • 1 quart Vanilla Ice-Cream Consider substituting with chocolate or strawberry ice cream.
  • 1 cup Frozen Raspberries Fresh berries can also be used.
  • 1 cup Mixed Nuts Substitute with sunflower or pumpkin seeds for a nut-free option.
  • 1/2 cup Dark Chocolate You can swap it for milk chocolate if preferred.
  • 1/2 cup Craisins Feel free to use any dried fruit.
  • 1 tbsp Orange Zest Lemon zest can be used for a different flavor.
  • 1/2 tsp Sea Salt Flakes Adjust to taste.
For the Cookies
  • 12 pieces Chocolate Ripple Biscuits Chocolate cookies can be used as a substitute.
For the Decoration
  • 1 cup White Chocolate Melts Melt carefully to avoid seizing.
  • 1/2 cup Mini Red M&M's For decoration.
  • 1/2 cup Spearmint Leaves For decoration.

Method
 

Preparation Steps
  1. Line a 20 x 30 cm slice pan with plastic wrap. In a large mixing bowl, combine softened vanilla ice cream, frozen raspberries, mixed nuts, dark chocolate, craisins, orange zest, and sea salt. Stir well, spread in the pan, cover, and freeze for 3-5 hours.
  2. In a microwave-safe bowl, add white chocolate melts and heat in the microwave at 15-second intervals, stirring until smooth. Set aside to cool.
  3. Lay out chocolate ripple biscuits on a large tray. Drizzle melted white chocolate over each biscuit and add mini M&M’s and spearmint leaves while it's still warm. Allow to set for about 10 minutes.
  4. Once ice cream mixture is firm, flip it onto a cutting board, remove plastic wrap and use a cookie cutter to punch out rounds. Assemble the sandwiches with a round of ice cream between two decorated biscuits and serve immediately.
