  • 1/2 cup dried cranberries
  • 1/2 cup walnuts chopped
  • 1/4 cup red onion finely diced
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Method
 

  1. Cook the penne pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled penne pasta, chopped spinach, crumbled feta cheese, dried cranberries, chopped walnuts, and diced red onion.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
  4. Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
