- Warm 1 cup of milk in a small saucepan until lukewarm, then stir in ¼ cup sugar and 2¼ teaspoons of yeast. Let sit for 5–10 minutes until frothy.
- In a large bowl, whisk together 3½ cups of flour and ½ teaspoon salt. Create a well in the center.
- In a separate bowl, whisk together 2 large eggs, ¼ cup melted butter, and 1 teaspoon vanilla extract until smooth. Add yeast mixture and combine well.
- Slowly add wet mixture into dry ingredients, stirring until a soft dough forms. Knead for 5–10 minutes.
- Place the kneaded dough in a greased bowl, cover with a cloth, and let it rise for 1–2 hours or until doubled.
- Punch down the risen dough and divide it into 12-15 pieces. Roll each piece into a ball and let them rest for 30 minutes.
- Heat oil in a deep pot to 350°F (175°C).
- Fry the dough balls in batches for 1–2 minutes on each side until golden brown.
- While warm, roll malasadas in granulated or flavored sugar.
- Serve warm, either plain or filled with custard or whipped cream.
