  • teaspoons Yeast fresh yeast
  • cups All-Purpose Flour gluten-free flour works too
  • 2 large Eggs room temperature
  • ¼ cup Butter melted, or vegetable oil for dairy-free
  • ½ teaspoon Salt kosher or sea salt recommended
  • 1 teaspoon Vanilla Extract or a dash of lemon zest

  • ½ cup Granulated Sugar
  • ¼ cup Flavored Sugar optional - cinnamon or vanilla sugar

Method
 

Step-by-Step Instructions
  1. Warm 1 cup of milk in a small saucepan until lukewarm, then stir in ¼ cup sugar and 2¼ teaspoons of yeast. Let sit for 5–10 minutes until frothy.
  2. In a large bowl, whisk together 3½ cups of flour and ½ teaspoon salt. Create a well in the center.
  3. In a separate bowl, whisk together 2 large eggs, ¼ cup melted butter, and 1 teaspoon vanilla extract until smooth. Add yeast mixture and combine well.
  4. Slowly add wet mixture into dry ingredients, stirring until a soft dough forms. Knead for 5–10 minutes.
  5. Place the kneaded dough in a greased bowl, cover with a cloth, and let it rise for 1–2 hours or until doubled.
  6. Punch down the risen dough and divide it into 12-15 pieces. Roll each piece into a ball and let them rest for 30 minutes.
  7. Heat oil in a deep pot to 350°F (175°C).
  8. Fry the dough balls in batches for 1–2 minutes on each side until golden brown.
  9. While warm, roll malasadas in granulated or flavored sugar.
  10. Serve warm, either plain or filled with custard or whipped cream.
