  • 4 fillets Salmon Fillets skin-on for extra flavor
  • 4 tablespoons Butter clarified for higher smoke point
  • 3 cloves Garlic fresh, minced
For the Roasted Radishes
  • 1 bunch Radishes halved
  • 1 teaspoon Salt sea salt recommended
  • 1 teaspoon Pepper freshly cracked

  • 1 tablespoon Lemon Juice freshly squeezed

Method
 

Cooking Steps
  1. Preheat the oven to 425°F (220°C).
  2. Prepare the radishes by trimming tops and tails, then halve them. Toss with olive oil, salt, and pepper.
  3. Roast the radishes for 20-25 minutes until tender and caramelized.
  4. In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.
  5. Sear the salmon fillets skin-side down, seasoning with salt and pepper for about 4-5 minutes.
  6. Flip the salmon and pour remaining garlic butter over. Cook for another 4-6 minutes until done.
  7. Serve alongside roasted radishes, drizzled with any leftover garlic butter and lemon juice.
