- Preheat the oven to 425°F (220°C).
- Prepare the radishes by trimming tops and tails, then halve them. Toss with olive oil, salt, and pepper.
- Roast the radishes for 20-25 minutes until tender and caramelized.
- In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.
- Sear the salmon fillets skin-side down, seasoning with salt and pepper for about 4-5 minutes.
- Flip the salmon and pour remaining garlic butter over. Cook for another 4-6 minutes until done.
- Serve alongside roasted radishes, drizzled with any leftover garlic butter and lemon juice.
