Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a large mixing bowl, combine ground chicken, chopped green onions, minced ginger, minced garlic, soy sauce, sesame oil, breadcrumbs, egg, and season with salt and pepper.
  3. Shape the mixture into 1-inch meatballs and arrange them on the baking sheet. Bake for 15-18 minutes.
  4. While the meatballs bake, heat oil in a large pot. Add chopped onion and sauté for about 5 minutes.
  5. Stir in minced garlic and grated ginger, cooking for another 30 seconds.
  6. Pour in chicken broth, soy sauce, and simmer for about 5 minutes.
  7. Add baby bok choy and optional noodles, cooking for 3-5 minutes.
  8. Gently add the baked meatballs into the soup and simmer for another 2-3 minutes.
  9. In a small pan, heat oil and fry wonton strips until golden.
