- Melt the butter over medium heat in a large pot for about 2 minutes. Then, add minced garlic and diced onion, cooking for 4-6 minutes until softened.
- Wash and trim asparagus, chopping it into 1.25 cm pieces. Add to the pot with a light seasoning of salt and pepper, sautéing for about 5 minutes.
- Pour in the vegetable broth and scrape up any bits stuck to the pot. Bring to a low boil, then cover and simmer for 10-15 minutes.
- Once tender, remove from heat and blend until smooth. Adjust consistency with broth or water as needed.
- Return to low heat, stirring in heavy cream and lemon juice. Taste and adjust seasoning.
