Step-by-Step Instructions
  1. Melt the butter over medium heat in a large pot for about 2 minutes. Then, add minced garlic and diced onion, cooking for 4-6 minutes until softened.
  2. Wash and trim asparagus, chopping it into 1.25 cm pieces. Add to the pot with a light seasoning of salt and pepper, sautéing for about 5 minutes.
  3. Pour in the vegetable broth and scrape up any bits stuck to the pot. Bring to a low boil, then cover and simmer for 10-15 minutes.
  4. Once tender, remove from heat and blend until smooth. Adjust consistency with broth or water as needed.
  5. Return to low heat, stirring in heavy cream and lemon juice. Taste and adjust seasoning.
  6. Serve warm, drizzling with olive oil and garnishing with chives and optional croutons.
