- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Slice the baguette into 1/2-inch rounds and arrange on the baking sheet. Brush lightly with olive oil.
- Bake the baguette slices for 8–10 minutes until golden and crisp. Cool on a wire rack.
- In a saucepan, cover the eggs with cold water and bring to a boil. Cook for 10 minutes over rolling boil.
- Transfer eggs to an ice bath to cool for 5 minutes, then peel and quarter them.
- Blend the cooled eggs, cream cheese, cheddar cheese, mayonnaise, lemon juice, salt, and pepper until smooth.
- Transfer the mousse to a piping bag or use a knife to spread onto the baguette slices.
- Pipe or spread the mousse on each slice and top with a piece of smoked salmon.
- Garnish with fresh dill and chives before serving.
