Ingredients

For the Chicken
  • 1.5 pounds Boneless, Skinless Chicken Breasts/Thighs Your main protein choice; breasts offer a leaner bite, while thighs deliver juicier flavor.
For the Marinade
  • 1 teaspoon Smoked Paprika Adds a warm depth; if you don't have it, regular paprika works too!
  • 1 teaspoon Garlic Powder Delivers a punchy flavor; feel free to substitute with fresh minced garlic for a more robust taste.
  • 1 teaspoon Onion Powder Enhances sweetness and complexity; no replacements necessary for this essential flavor.
  • 1 teaspoon Salt A key for flavor enhancement; adjust depending on personal or dietary needs.
  • 1/2 teaspoon Black Pepper Provides a spicy kick; freshly ground pepper will yield the best flavor.
For the Bang Bang Sauce
  • 1/2 cup Mayonnaise or Greek Yogurt This forms the base; Greek yogurt makes for a lighter option that’s equally delicious.
  • 3 tablespoons Sriracha Adds the heat – tweak the amount to fit your spice preferences.
  • 1/4 cup Sweet Chili Sauce Infuses sweetness with a hint of tang; no substitutions needed for this star ingredient.
  • 1 tablespoon Honey Brings a natural sweetness; maple syrup serves as a great vegan alternative.
  • 1 tablespoon Lime Juice Brightens the dish; always opt for freshly squeezed juice for maximum flavor.

Equipment

  • Grill
  • mixing bowl
  • Wooden Skewers

Method

Step-by-Step Instructions
  1. Begin by cutting your boneless, skinless chicken breasts or thighs into 1-inch cubes. In a mixing bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper, then coat the chicken pieces with the marinade. Allow the chicken to marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  2. While the chicken marinates, soak wooden skewers in water for 20-30 minutes to prevent them from burning on the grill.
  3. Once marinated, thread the chicken pieces onto the soaked skewers, leaving about an inch of space between each piece.
  4. Preheat your grill to a medium-high temperature of 400-450°F (200-230°C). Lightly oil the grill grates with a paper towel soaked in cooking oil.
  5. Carefully place your assembled Grilled Bang Bang Chicken Skewers on the hot grill. Cook for approximately 3-4 minutes on each side, or until the chicken is beautifully charred and reaches an internal temperature of 165°F (74°C).
  6. Once grilled to perfection, remove the skewers from the grill and let them rest for 5 minutes.
