- Wash and cut potatoes into bite-sized pieces, then par-cook them in boiling water for about 5 minutes until slightly tender.
- In a large bowl, combine shrimp, cooked potatoes, corn, melted butter, Cajun seasoning, and minced garlic. Squeeze lemon juice over everything and stir gently.
- Cut four large pieces of foil, about 12 inches long. Place an equal portion of the mixture in the center of each piece, seal tightly.
- Preheat grill to medium-high heat (400°F). Cook packets on grill grates for 15-20 minutes, flipping halfway.
- Remove from grill, let cool slightly before opening. Serve directly from the packets.
