  • 1 lime juice

For the Toppings
  • 1 avocado omit for lower-fat version

  • 1 can black beans alternatives: white beans, kidney beans
  • 1 cup corn use frozen or fresh corn instead of canned
  • 1 cup cherry tomatoes alternatives: regular tomatoes, diced bell peppers
  • ½ cup greek yogurt can be substituted with sour cream or omitted
  • 1 red onion use shallots for a milder taste
  • 1 jalapeño pepper omit for no heat or swap with milder peppers
For Garnishing
  • to taste fresh cilantro use parsley for those who dislike cilantro
  • to taste sea salt
  • to taste black pepper

Method
 

Preparation Steps
  1. Prepare the Marinade: In a medium bowl, whisk together ¼ cup olive oil, ¼ cup lime juice, and spices.
  2. Marinate the Chicken: Place 1 pound of chicken breasts into a zip-top bag and pour the marinade over them.
  3. Preheat the Grill: Preheat your grill pan or outdoor grill to medium-high heat.
