Ingredients
  

  • 2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
  • 1/2 cup unsalted butter melted
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh chives chopped
  • 1 tablespoon fresh cilantro chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional for heat
  • Skewers wooden or metal

Method
 

  1. In a bowl, combine melted butter, minced garlic, parsley, chives, cilantro, smoked paprika, onion powder, salt, black pepper, and cayenne pepper. Mix well to create the cowboy butter marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
